You’ve probably seen them at your grocery store bakery. Lofthouse sugar cookies are the round sugar cookies with frosting and sprinkles. They are a soft sugar cookie with a soft frosting. Sugar cookies decorated with royal frosting are often dry and hard, but these sugar cookies are soft through and through.

The great thing about this Lofthouse cookies recipe is that it’s easy to make. Unlike sugar cookie cut out cookies, these are drop sugar cookies. So you don’t need to worry about any special equipment like a rolling pin, or cookie cutter. And you don’t have to worry about your decorating skills because all you have to do is frost the cookies and decorate with sprinkles.

Because this Lofthouse cookies recipe requires that the cookie dough be chilled before baking, it’s a great cookie dough to make in advance. Store the cookie dough in an airtight container in the refrigerator and it will keep for a few days.

This is a copycat recipe based on the Lofthouse sugar cookie you’d get at the store. I can’t guarantee that this recipe is identical to the secret recipe of the original Lofthouse cookie, but I can tell you that these cookies are just as yummy as any store-bought Lofthouse cookies. Their soft texture almost melts in your mouth it’s so light and tender.

With this Lofthouse cookies recipe you don’t need any special equipment. I find that an electric stand mixer, or hand mixer, are helpful for beating the unsalted butter and sugar together. A mixer helps cream the ingredients together until light and fluffy. But if you don’t have a mixer, just make sure to use room temperature butter. The softened butter will be much easier to cream.

One of the secrets to make light and fluffy sugar cookies is that the Lofthouse cookies recipe uses cake flour. Cake flour is much lighter and finer than all-purpose flour, so it gives you a really tender and delicate crumb. Sifting the dry ingredients also helps give you extra soft cookies. You want to measure the ingredients first, and then sift as you add them to the batter.

For this homemade version of the Lofthouse sugar cookies, I’ve used vanilla extract as the flavor booster. However, if you want a hint of almond flavor you can use 1/4 teaspoon almond extract. Go lightly with this ingredient, you just want a subtle hint of almond flavor.

Ingredients
  

Cookies

  • 2 cups cake flour
  • 1 teaspoon cream of tartar
  • Ā½ teaspoon baking powder
  • Ā½ teaspoon salt
  • Ā½ cup unsalted butter softened
  • Ā¾ cup granulated sugar
  • 1 egg
  • 1 Ā½ teaspoons vanilla extract
  • 2 tablespoons heavy cream
  • 2 tablespoons vegetable oil

Frosting

  • Ā¼ cup unsalted butter softened
  • 1 cup powdered sugar
  • ā…› teaspoon salt
  • Ā½ teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • Pink and/or blue food dye
  • Sprinkles

Instructions
 

  • In a mixing bowl, add the softened butter and sugar. Blend with a mixer until fluffy.
  • Add the vegetable oil, heavy cream, and vanilla. Blend again until creamy.
  • Sift in the cake flour, cream of tartar, baking powder and salt.
  • Fold everything together until combined and a thick dough forms.
  • Cover in plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.
  • Use a 2 inch scooper to scoop the chilled cookie dough onto the baking sheet. Space each dough ball about 2 inches apart from each other.
  • Bake for 12 minutes or until the cookies are set and are barely browned at the edges.
  • Let cookies cool completely.
  • While the cookies bake, make the frosting.
  • In a mixing bowl, add the butter and blend with a hand mixer until fluffy and the color has paled.
  • Add the powdered sugar and salt, then blend again until incorporated. The frosting may still be crumbly at this point.
  • Add the vanilla and heavy cream and blend until the frosting is creamy.
  • Dye with pink or blue food coloring to achieve desired color.
  • Transfer to a piping bag and snip a large hole at the end.
  • Frost the cooled cookies by creating a thick large swirl from the center to the edges. Then smooth the harsh lines with a butter knife. Repeat with all the cookies and top with colorful sprinkles of choice.

  • Store cookies in a tightly sealed container, or Ziploc bag, at room temperature for up to 5 days
