Magically Delicious Lucky Charm Marshmallow Cookies Recipe
These Lucky Charm marshmallow cookies will make you feel like you have the luck of the Irish on your side. A soft cookie that is stuffed with gooey marshmallow. And with its green color and Lucky Charms cereal on top, these are the perfect cookies to make for St. Patrick’s Day.
About Lucky Charm Marshmallow Cookies
These Lucky Charm marshmallow cookies are so fun to make. It’s an easy recipe for a stuffed cookie, and it is one that I like to make with my kids. Of course I have to have extra marshmallows on hand because my daughter eats one for every one she stuffs in a cookie.
Step by Step Process With Photos
In addition to being fun to make, these cookies are also really easy. It’s a pretty typical cookie batter that is colored green to give it a touch of Irish. Here’s a look at the ingredients that you need.
You don’t have to worry about chilling the cookie dough before baking, so start by preheating the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
I like to use an electric mixer for these Lucky Charm marshmallow cookies. Either a stand mixer, or hand mixer works really well for creaming together the butter, granulated sugar, and brown sugar. Cream until light and fluffy. Then mix in the egg, vanilla extract, and green food coloring. You don’t have to use food coloring if you prefer a more natural coloring, but for an Irish celebration like St. Paddy’s Day the green really makes these cookies pop.
You can also add almond extract if you’d like, but if you aren’t a fan of it’s flavor these cookies are just as yummy without it. Mix until smooth and the color is evenly distributed.
Sift all of the dry ingredients into the bowl. I find that the easiest way to do this is to use a mesh strainer. Place it over the bowl and add the flour, baking soda, baking powder, and salt into the strainer. Then gently tap the strainer against the palm of your other hand and the dry ingredients get sifted into the wet ingredients in the bowl. Use a spoon, or a spatula, to gently mix the ingredients together. I don’t use the mixer at this point because I don’t want to overmix the cookie dough.
Now you’re ready to start the process of shaping the cookies. Scoop out about 2 tablespoons of cookie dough. Flatten it slightly and then place a marshmallow on top.
Cover the top of the marshmallow with a little more cookie dough. Fold the dough around the marshmallow and seal the edges. Roll the dough to form a ball and then place on the parchment lined baking sheet. Be sure to leave about 2 inches between balls.
Bake the cookies for about 11-12 minutes. The edges will be set and the tops will have small cracks. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
As the cookies cool, prepare the white chocolate drizzle. You can either use white chocolate chips, or chocolate candy melts. Microwave the chocolate for about 30 seconds, and continue in 15 second intervals as needed. Mix together until smooth and creamy.
Use a fork, or spoon, to drizzle the white chocolate on top of the cookies. Immediately top each cookie with some of the Lucky Charms cereal. You want to make sure that you add the cereal before the chocolate hardens.

Ingredients
Cookie Batter
- 1 cup unsalted butter softened
- ¼ cup brown sugar
- 1 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract optional
- 1 teaspoon green food coloring
- 2 ½ cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Large Marshmallows
Topping
- ½ cup white chocolate melting chips
- ½ cup dried lucky charms roughly chopped
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg, vanilla extract, almond extract, and green food dye until evenly combined.
- Sift the flour, baking soda, baking powder, and salt into the wet ingredients
- Fold together with a rubber spatula until a soft dough forms.
- Scoop 2 tablespoons of dough, flatten slightly, place a marshmallow in the center, and cover with another small piece of dough.
- Seal edges, roll into a smooth ball, and place on the prepared baking sheet, spacing 2 inches apart.
- Bake for 11-12 minutes until edges are set and tops are slightly cracked.
- Let cookies cool on the baking sheet for a couple minutes, then transfer to a wire rack.
- Melt white chocolate chips and drizzle over the cookies.
- Sprinkle Lucky Charms cereal on top.
- Let sit before serving, or storing in an airtight container.
