There’s nothing better than gooey S’mores. The marshmallow and chocolate treat may be a staple for many of us during the summer months, but what about turning it into a delicious cookie to enjoy all year. These smores stuffed chocolate chip cookies combine the best of two sweet treats.
Making Smores Stuffed Chocolate Chip Cookies
I like this smores stuffed chocolate chip cookies recipe because itās really easy to make, and it has simple ingredients. If youāve never made a stuffed cookie before you may feel a little intimated, but donāt. My philosophy with baking cookies is that you canāt go wrong.
So while I’ll give you the recipe and general guidelines for how to make these cookies, have fun and mix things up a bit. For instance, this recipe calls for using regular marshmallows that you cut in half to stuff in the cookie. However, you could use mini marshmallows if you prefer.
Using the larger pieces of marshmallow allows them to hold-up better when you bake them. But, the mini size will work too and it just makes the cookies a little different. So play around with it and see which you prefer.
Here are a couple of tips for making these smores stuffed chocolate chip cookies. Let your unsalted butter soften to room temperature so that it creams together more evenly. I like to use my stand mixer with a paddle attachment to mix the wet ingredients, but an electric hand mixer, or a good old fashioned large bowl and spoon will do the trick too.
Don’t over mix the dry ingredients. You want to mix the batter just until the flour mixture is combined, so using a spoon or rubber spatula for this step helps prevent overmixing.
Smores Stuffed Chocolate Chip Cookies

- Parchment Paper
- Cookie Sheet
Ingredients
- Ā½ Cup Butter plus 2 Tablespoons
- Ā½ Cup Brown Sugar
- Ā¼ Cup Granulated Sugar
- Ā½ tsp. Vanilla Extract
- 1 Egg
- 1 ā Cup All Purpose Flour
- Ā½ tsp. Baking Soda
- Ā¼ tsp. Salt
- Ā¾ Cup Chocolate Chips
- 4 Graham Cracker Halves
- 1 Bar of Chocolate
- 5-8 Marshmallows
Instructions
- Preheat the oven to 350 degrees.
- In a mixing bowl, add the softened butter, brown sugar and white sugar. Cream until smooth.
- Add the vanilla extract and egg. Mix until combined.
- Pour in the flour, baking soda and salt. Blend until combined.
- Fold in the chocolate chips.
- Use a medium-large cookie scoop to scoop cookie dough and place it on the parchment paper. Flatten. On top add half of a graham cracker broken in two.
- Then cut a large marshmallow in half and place the two halves on top.
- Top with a portion of the chocolate bar. Take another scoop of cookie dough and flatten on top of the smores center to cover all of the pieces.
- Repeat until all of the cookie dough is used up.
- Place the cookies in the refrigerator for the 30 minutes.
- Bake the cookies for 20-22 minutes until golden brown.
- Remove from the oven and let cool for about 5 minutes.
Tips for Stuffing Cookies
When you make stuffed cookies you can sometimes just form a ball with the cookie dough in your hand. But, with these smores stuffed chocolate chip cookies, you’ll want to stuff them on the parchment lined cookie sheet.
You essentially are making a sandwich with the cookie dough and filling. This is the best way to do it since the stuffing for this cookie is so big. You need a lot of cookie dough to surround it.
Use a cookie scoop to place one large scoop of cookie dough on the cookie sheet. Flatten it down a bit with your hand. You want a 3-inch disc of cookie dough that you top with the smores toppings. I like to use kitchen scissors to cut the marshmallows in half. It’s a lot easier than using a knife.
Once you have the smores toppings on top of the cookie dough, put another flattened scoop of dough on top and then pinch the top and bottom together.
This smores stuffed chocolate chip cookies recipe makes giant cookies, but if you prefer a smaller cookie you can play around with the smores toppings. This is where using mini-marshmallows may work better. And, you can put smaller pieces of the graham crackers and Hershey chocolate inside too. I like smaller pieces of graham cracker, so I like to use a graham cracker quarter instead of half per cookie.
Make sure you don’t overbake these smores stuffed chocolate chip cookies. Pull them out of the oven when they are still soft in the middle. This way you get a chewy cookie with a gooey center loaded with marshmallows, chocolate and graham cracker pieces. Let them rest on the large baking sheets before transferring to a cooling rack.
When they are cooled you can transfer them from the wire rack to an airtight container where they will keep for a couple of days. If you want the marshmallow to be gooey, you can always reheat the cookies for a minute or two to warm them up before eating. It’s like getting a fresh from the oven cookie every time!
You can also freeze the cookies. Or, make frozen cookie dough balls to pull from the freezer and bake as needed. You’ll just need to adjust your baking time a few minutes to accommodate for the dough being frozen.
Variations for S’Mores Chocolate Chip Cookies
When making cookies I always like to think about different ways that I could use the cookie dough. And, how can I take one cookie dough and turn it into multiple cookies. For this smores stuffed chocolate chip cookies recipe, I already mentioned how you can substitute mini marshmallows for the large marshmallows. But, you can also play around with the other stuffing ingredients too.
Instead of using pieces of graham crackers, you could use graham cracker crumbs instead. How would you incorporate this you’re wondering? You have a couple of options. The first would be to sprinkle the crumbs on the top of the cookie, but you have to be careful that they don’t burn while baking. So another option would be to put them on the bottom. This becomes more of a traditional S’Mores style stacking of crunchy graham crackers on the botttom, with marshmallows and chocolate bar on top.
Another thing you can substitute is the type of chocolate you use. While Hershey’s chocolate bars are the gold standard when it comes to making S’Mores, you could use different types of Hershey’s chocolate for this cookie. For an extra chocolatey cookie, try using Hershey’s Nuggets instead of a bar. The thicker nuggets will add a lot more chocolate flavor to these cookies. You could also try dark chocolate instead of milk chocolate for a different flavor.
If adding two pieces of marshmallow are too much for you, go with using just half of a marshmallow per cookie. This comes down to personal preference and the ratio you prefer with S’Mores is how you can adjust these smores stuffed chocolate chip cookies.
Easy Chocolate Chip S’Mores Cookies
Who says you need a campfire to enjoy S’Mores? Of course there’s nothing better than sitting around a fire on a cool summer night. And for me there’s no better way to enjoy that experience than with a burnt marshmallow that oozes out from the graham crackers and melts the chocolate at the same time.
This nostalgic treat is one that I look forward to every summer, and my kids love them as much as I do.
