My initial thought is St. Patrick’s Day because the pretty green layer is perfect for celebrating all things Irish. But the mint flavor makes it equally good for Christmas, New Years, or any winter gathering.

These mint chocolate chip brownies are a layered brownie that is bursting with flavor. There is the fudgy and soft chocolate brownie on the bottom, then a layer of mint flavored frosting. It’s all topped with a chocolate ganache so you get a mix of chocolate and mint with every bite.

As a layered brownie, there are three different sections to these mint chocolate chip brownies. First, you have to make and bake the base chocolate brownie. Then add the mint flavored frosting, and finish it off with a chocolate ganache. Here are the ingredients you’ll need for all 3 layers.

Make the Brownie Batter

Preheat the oven and prepare a 9″x9″ baking pan. You can either grease the pan, or use parchment paper to line it. Place 8 ounces of semisweet chocolate chips in a bowl and set aside. In a separate bowl, use a microwave to melt the butter.

You can also melt the butter over the stove in a saucepan if you prefer to brown the butter to get a deeper flavor. But I like to use the microwave because it’s so quick and easy. Pour the melted butter over the chocolate chips and let them sit for a couple of minutes. Then whisk together until smooth. Add the granulated sugar, brown sugar, and vanilla extract and mix until combined.

Add the eggs to the chocolate mixture and mix until smooth. Then add the dry ingredients and mix just until combined. Don’t overmix the batter once you’ve added the flour.

Pour the batter into the prepared baking pan, and spread it out evenly. Bake the brownies for about 35 minutes, or until the center is still soft and you get a few moist crumbs when inserting a toothpick in the middle. Let the brownies cool.

Make the Frosting

While the brownies cool, make the mint frosting. Start by creaming the butter, and then gradually add in the powdered sugar, milk, peppermint extract, and green food coloring.

Mix the frosting until fluffy, and then spread it evenly over the cooled brownies.

Chocolate Ganache

Place 1 cup of semisweet chocolate chips in a bowl and set aside. Heat 1/2 cup of heavy cream until it is warm, but not boiling. Pour the cream over the chocolate chips and let the mixture sit for a couple of minutes. Stir until creamy.

Spread the chocolate ganache on top of the mint frosting. Make sure to spread it out evenly so that you have nice smooth layers. Refrigerate the brownies for 15 minutes so that the chocolate sets.

Once the chocolate has set, pull them out of the refrigerator. The mint chocolate chip brownies are ready to cut and serve. Store them in an airtight container for up to two days.

Brownie Batter

  • 1 cup unsalted butter melted
  • 8 ounces semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • ¾ cup all purpose flour

Mint Frosting

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring

Chocolate Ganache

  • ½ cup heavy cream warmed
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
  • In a microwave-safe bowl, melt the butter. Place the chocolate chips in a mixing bowl and pour the melted butter over them. Let sit for a couple of minutes and then whisk together until melted.
  • Add the granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  • Add the flour and salt. Mix just until combined.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. Let cool completely before frosting.
  • In a mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, milk, peppermint extract, and green food coloring. Mix until smooth and fluffy.
  • Spread the mint frosting evenly over the cooled brownies.
  • Place chocolate chips in a bowl and set aside.
  • In a small saucepan or microwave-safe bowl, warm the heavy cream until it just turns hot (not boiling).
  • Pour the warm cream over the chocolate chips and let sit for a minute, then stir until smooth.
  • Spread the ganache over the mint frosting and smooth it out evenly.
  • Chill the brownies in the fridge for at least 15 minutes before slicing.
