Step by Step Process With Photos

There are two general steps to making these cosmic brownie cookies. First you make the cookies, and then you decorate them. Here’s a look at the ingredients you need, and a breakdown of each individual step.

The ingredients for this recipe are pretty straightforward. Couple of quick tips, make sure you use unsalted butter. And to get the deep, rich flavor and color for these cookies, go with a dark cocoa powder.

The recipe calls for colored candy coated chocolate chips for the topping, but you can use whatever decorations you have on hand. So if you only have sprinkles on hand, go with those. You may not get the classic crunch like you’d get with Little Debbie brownies, but you’d still get lots of color.

Make the Cookies

Start by making the cookies. These are a very straight forward drop cookie. A stand mixer makes things easier for this recipe, but a hand mixer is great too. Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Set aside until you need it.

Start by creaming together the softened butter, brown sugar, and granulated sugar. Mix until you have a smooth consistency. Scrape down the sides of the bowl, and then add the egg, vanilla extract, and corn syrup. Mix again until smooth.

Add the flour, cocoa powder, salt, and baking soda to the bowl. Mix the dry ingredients into the wet ingredients. Scrape down the sides of the bowl as needed.

Scoop out a large ball of cookie dough and place it on the parchment lined baking sheet. These are big cookies and will spread when baking, so be sure to leave about 3 inches between cookies. Bake the cookies for about 10-11 minutes. Don’t overbake them as you want the center to be chewy. The edges of the cosmic brownie cookies will be set and the center of the cookies won’t look glossy anymore.

Make the Topping

Let the brownies cool while you make the chocolate ganache. You want to make sure that the cookies and ganache have cooled before you start decorating the cookies. To make the ganache, place the heavy cream and chocolate chips in a microwave-safe bowl. Microwave for one minute, and then stir until smooth. Let the ganache sit for a minute so that it thickens and cools a bit.

Add a spoonful of ganache on top of each cookie and spread it out evenly. Sprinkle with the colored chocolate chips, or decorations of your choosing.

Ingredients
  

Cookie Batter:

  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 tablespoon light corn syrup
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup Hershey’s dark cocoa powder
  • 1 ½ cup flour

Topping –

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Candy coated chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees. Line a couple baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, combine the butter, brown sugar and sugar. Use the paddle attachment to cream together until smooth.
  • Add in the egg, vanilla and corn syrup. Mix well, scraping the sides often.
  • Add the dry ingredients – baking soda, salt, cocoa and flour. Mix well, scraping the sides often and mixing again.
  • Using a large ice cream scoop (or about 3 tablespoons worth) to divide the dough into 8-9 cookies. Place on the parchment lined baking sheets, leaving about 3 inches between each cookie as they will spread.
  • Bake in the preheated oven for 10-11 minutes or until the edges are set and the center is no longer glossy. Do not overbake. Allow to cool before decorating.
  • For the topping, in a medium bowl combine the heavy cream and the chocolate chips. Heat in the microwave for one minute. Stir thoroughly until smooth. Allow to cool slightly before topping the cookies.
  • To decorate the cookies, scoop out a spoonful of the chocolate ganache and spread over the tops of each cookie. Immediately sprinkle with the candy coated chocolate chips.

Storage: Cookies can be stored in an airtight container in the fridge for up to 7 days.
