Step by Step Process

When you’re making a recipe with very few ingredients, you want to make sure that you make the most out of each ingredient. For these Nutella chocolate bonbons, that means that you want to use a good chocolate. And for the hazelnuts, toasting the nuts helps accentuate their flavor.

Preparing Nuts

Start by spreading the hazelnuts on a baking sheet and toasting in a 350 degree oven for about 5 minutes. The nuts give off a delicious fragrance when they are ready.

Let the hazelnuts cool and then remove their skins. Next, place the nuts in a food processor and pulse a few times until the hazelnuts are chopped into smaller pieces. If you don’t have a food processor, you can use a nut chopper instead.

If you don’t have either of those you can chop the nuts with a knife. However, since they are a round nut they are more difficult to chop because they slide around. A safer option is to place the nuts in a Ziploc bag and use a meat mallet to break them up. Once they are broken up you can transfer them to a cutting board and chop into smaller pieces if needed.

Make Nutella Filling

Using a microwave-safe bowl, heat the Nutella and butter in the microwave for 30-seconds. Heat for another 15-30 seconds, until the butter has melted. Stir the butter and Nutella together to combine. Add the powdered sugar and stir.

Melt Chocolate

Now you’re ready to move onto the chocolate. The easiest way to make these bonbons is by using chocolate chips. However, if you have a favorite chocolate bar, wafers, or chocolate discs, they will all work. Just chop bars and discs into smaller pieces so that they will melt more easily.

Place the chocolate in another microwave-safe bowl and heat for 30-seconds. Stir and reheat as needed.

Assembling Chocolate Bonbons

Take the melted chocolate and pour it into the mold. This is the outer layer of the bonbon so you just want to coat the inside of each mold. After you pour the chocolate in each opening in the mold, tip the entire mold upside down so that the excess chocolate comes out. Use a metal scraper, or spatula, to scrape the mold to get rid of the excess chocolate on top. Refrigerate the mold for 10 minutes to help set the chocolate.

Add some of the hazelnuts into each mold, and then top it with the Nutella mixture. Be sure that you leave enough room to add more chocolate. This final layer of chocolate becomes the bottom of the bonbon and helps hold everything inside.

After the chocolate has been added, scrape-off the excess so that the bonbons are nice and clean. Refrigerate for 30 minutes, and then the Nutella bonbons are ready!
