Take 12 mini Oreos and scrape the cream from the inside. This gives you 24 mini Oreo cookie wafers that will be used as the Mickey Mouse ears.
Use separate bowls and the microwave to melt the red and green chocolate melting discs at 30 second intervals until completely smooth.
Dip 6 of the Oreos into the melted red chocolate covering half of the cookie. Then stick the popsicle stick in between the Oreo sandwich on the chocolate dipped side of the Oreo.
Lay the chocolate dipped Oreo flat on the parchment paper.
Repeat this process with the remaining 6 Oreos, using the green melted chocolate to cover half of each cookie.
Take holiday sprinkles of your choice and sprinkle on the green Oreos. Be sure to do this before the melted chocolate sets.
To give the iconic Mickey look on the red Oreos, take 2 circular pearl sprinkles and place them near the center of the red melted chocolate.
Pour the excess red and green melted chocolate into separate piping or sandwich bags
Snip the tips to create a small hole.
Create a horizontal line of green melting chocolate where the red dipped chocolate on the Oreo ends.
Repeat with the red melting chocolate bag on the green Oreos.
To create the Mickey ears, squeeze a little chocolate on one side of the mini Oreo chocolate wafer. Stick it in between the top right of the Oreo pop to create one Mickey ear, and place the other half of the mini Oreo to the left. Can use the leftover melted chocolate as glue if needed
Repeat this process to make Mickey Ears on the rest of the Oreos.
Refrigerate for 10 minutes, until the chocolate has hardened.
Once the chocolate has set, you can store the Oreos at room temperature in an airtight container.
Notes
Add a teaspoon of oil, or shortening to the melting chocolates if it is too thick.
Can use popsicle sticks, or lollipop sticks
