A pretty vanilla whoopie pie that is perfect for Valentine's Day. A soft and fluffy cake filled with a vanilla frosting and topped with sprinkles.

Instructions
Making The Cake
Preheat the oven to 350 degrees Fahrenheit and spray a whoopie pie pan, or muffin top pan, with non-stick spray.
Using an electric mixer, beat the butter, sugar, vanilla, egg and sour cream until combined and smooth.
In a separate bowl, whisk together the cake flour, baking powder and salt.
Alternating between the dry ingredients and the milk, gradually mix into the wet ingredients and mix until thoroughly combined.
Scoop some of the batter into the whoopie pie pan and sprinkle Valentine's Day sprinkles on top.
Bake in the oven for 12-15 minutes or until a toothpick comes out clean.
Allow the cakes to cool completely.
Filling and Assembly
Using a mixer, beat the butter, powdered sugar, vanilla and heavy whipping cream until smooth. The mixture will be thick and holds a peak.
Scoop 1 C of frosting into the piping bag with the star tip and set aside.
Based on the size of the whoopie pies, pair two pieces together.
Pipe a dollop of the frosting onto the bottom layer of the whoopie pies.
Sprinkle the heart sprinkles onto the sides of the frosting.
Place the second whoopie pie on top and press down to create a sandwich.
You can add add more sprinkles if desired. While holding the whoopie pie, shake sprinkles to cover the outer edges of the filling.
