Fun Chocolate Chip Smores Cookies: A Gooey Campfire Treat
If your favorite summertime treat is an ooey-gooey S’More, then you are going to love this recipe for chocolate chip Smores cookies. For me it combines two of my favorite desserts. I love a good chocolate chip cookie, and I’d say that I’m equally obsessed with making S’Mores. Whether it’s over an open campfire, or making them in my kitchen, I think that these summertime treats are something to be enjoyed year round.
About Chocolate Chip Smores Cookies
There are a lot of different ways to make S’More cookies. In fact, I have another recipe for one but it’s a little different because it’s S’Mores Stuffed Chocolate Chip Cookies. With these cookies, the cookie dough is stuffed with pieces of graham cracker and marshmallows. So it has most of the same ingredients as these chocolate chip smores cookies, but the cookies are very different.
What I like about this recipe is that it gives you all of the layers you get with a typical S’more. It starts with a graham cracker on the bottom, it’s layered with a chocolate chip cookie, and then topped with Hershey’s chocolate. So it’s like eating an open-faced S’more and I think that makes these chocolate chip smores cookies so fun to eat!
Step by Step Process With Pictures
Let’s start by looking at the ingredients for this recipe. It includes all of the typical ingredients for a chocolate chip cookie. Plus, graham crackers, chocolate, and marshmallows to turn them into chocolate chip smores cookies.
I use mini marshmallows, but if you only have large marshmallows available you could use those instead. Just use some kitchen shears to snip the marshmallow into smaller pieces.
I use Hershey’s chocolate because I use regular Hershey’s bars when I make campfire S’Mores. But you can substitute any chocolate you’d like. You can even go with a dark chocolate if that’s how you like them, but I personally think that milk chocolate on top is the way to go. As for the chocolate chips on the inside, any combination works. I usually use semisweet chocolate chips when I make chocolate chip cookies, but you can use milk chocolate instead. Or, a mix of chocolates.
Let’s start by getting everything prepped. Preheat the oven, line a cookie sheet with parchment paper, and mix the dry ingredients together and set aside. This recipe is one where I do recommend using a stand mixer, or electric hand mixer. Start by creaming the butter until it’s light and fluffy. Scrape down the sides of the bowl and add the granulated sugar and brown sugar. Mix again until the mixture is nice and creamy.
Add the vanilla extract and egg. Mix again until combined, but you don’t want to mix it too much once the egg is added.
Scrape down the sides of the bowl again, and then gradually add the dry ingredients. Mix just until the flour is combined, then add the chocolate chips and marshmallows.
Now you’re ready to start assembling the cookies. Start by placing 1/2 a graham cracker down for each cookie you want to make. Use a cookie scoop to scoop out some cookie dough and place it on top of the graham cracker. Place the cookie sheet in the oven and bake for 5 minutes.
Take the cookies out of the oven and place a section of chocolate on top of each cookie. Push it into the cookie a little. When all of the cookies have been topped with chocolate, return the cookie sheet to the oven and continue baking for another 5-7 minutes. Pull the cookies from the oven and let them cool on the cookie sheet for at least 5 minutes before transferring to a wire rack to cool completely.
These cookies are best eaten on the day that they are made. That way the graham crackers stay nice and crispy, while the cookie is soft and gooey inside. If you want to make them for a special occasion, or party, I recommend making the cookie dough ahead of time.
The cookie dough will keep in the refrigerator for a couple of days. Assemble and bake the cookies on the day you need them. I’m sure that these chocolate chip smores cookies will be a big hit with your guests. No matter what time of year you make them, I guarantee you’ll be transported to summertime and sitting by a campfire.
S’mores Chocolate Chip Cookies

Ingredients
- 2 cups sifted all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 12 tablespoons unsalted butter softened
- ¾ cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1.5 teaspoons vanilla extract
- 1 cup chocolate chips milk or semisweet
- 1 cup mini marshmallows
- 12 pack Snack size Hershey's chocolate bars broken into segments
- Graham crackers
Instructions
- Preheat oven to 350 degrees F.
- Combine the flour, baking soda, and salt together in a bowl and set aside.
- In a stand mixer, mix the butter until light and fluffy. Add the granulated sugar and dark brown sugar and continue mixing until well combined. Scrape down the sides of the bowl as needed.
- Mix in the vanilla extract and egg.
- Slowly add in the flour mixture. Scrape the bottom and sides of the bowl as necessary.
- Add the chocolate chips and marshmallows and mix just until combined. Don't overmix.
- Break the graham crackers in half and lay them on a cookie sheet lined with parchment paper. Scoop cookie dough onto the graham crackers and bake for 5 minutes.
- Remove the cookies from the oven and add a section of Hershey's bar on top. Lightly push the chocolate into the cookie dough.
- Return the cookie sheet to the oven and bake an additional 5-7 minutes.
