Easy Brownie Stuffed Chocolate Chip Cookies: A Fudgy Treat
Probably the two most popular desserts are brownies and chocolate chip cookies. But what if you could enjoy both flavors in one bite? These brownie stuffed chocolate chip cookies are the perfect way to enjoy both at the same time.
About Brownie Stuffed Chocolate Chip Cookies
You can make these brownie stuffed chocolate chip cookies completely by scratch, but I like to use a box brownie mix to make the brownies. Then I can focus on making the cookie dough for the chocolate chip cookies while the brownies bake. It’s an easy way to multi-task to get these cookies done.

Here’s a look at the ingredients you need for this brownie stuffed chocolate chip cookies recipe.
Make the Brownies
Start by making the brownies. You can use your favorite brownie recipe, or favorite brownie mix. Follow the instructions on the box and mix all of the ingredients together until you have a smooth batter.
Pour the batter into an 8″x8″ parchment lined baking pan. Bake the brownies at the temperature listed on the box, but under bake the brownies by about 8-10 minutes. Because the brownies will be baked again in the cookie, under baking them the first time keeps the center of the cookie fudgy and soft.
Make the Cookies
Place the melted butter, brown sugar, and granulated sugar together in a bowl. Whisk together until smooth. Add the eggs and the vanilla extract and mix again.
Add the flour, baking soda, and salt. Stir just until combined and then add the chocolate chips. Mix again to evenly distribute the chips, but don’t overmix.
Cover the cookie dough and place it in the refrigerator to chill for 30 minutes. When you’re ready to stuff the cookie dough and bake the cookies, preheat the oven to 350 degrees.
To assemble the brownie stuffed chocolate chip cookies, start by cutting the brownies into 1/2 inch squares. You should be able to get 25 squares per pan of brownies. Take a scoop of cookie dough and flatten it slightly. Place a square of brownie in the middle of the cookie dough, and fold the cookie dough around it.
Add additional cookie dough if needed to cover up the brownie. Place the cookie dough balls on a baking sheet. Be sure to leave at least 2 inches between cookie dough balls.
Bake the cookies for about 12 minutes. The edges will be golden, but the center will still look under done. Let the cookies cool on the baking sheet for about 5 minutes before eating the cookies. I love eating them right away because the middle is soft and fudgy. But you can also transfer the cookies to a wire rack to finish cooling, and then place them in an airtight container. The cookies will keep for a couple of days.

Brownie Stuffed Chocolate Chip Cookies

- 9×13 Baking Sheet
- 9×9 Baking Pan
- Parchment Paper
Ingredients
Cookie Dough
- 1 cup unsalted butter melted
- 1 ¼ cups brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 ½ cups all purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 2 cups chocolate chips
Brownie Filling
- 1 box brownie mix + ingredients on box
Instructions
- Preheat the oven to the temperature listed on the brownie box mix.
- In a large mixing bowl add the brownie mix along with the ingredients listed on the box. Mix together until combined and smooth.
- Transfer to an 8×8 baking dish lined with parchment paper. Spread batter evenly.
- Bake in the oven for 8-10 minutes less than the time stated on the box mix directions. This will ensure fudgy, slightly undone brownies.
- While the brownies are baking, make the chocolate chip cookie dough.
- In a separate bowl, add the melted butter, brown sugar and granulated sugar. Whisk together until combined.
- Add the eggs and vanilla extract. Whisk again until smooth.
- Now add the flour, baking soda and salt. Fold the dry ingredients into the wet until combined.
- Pour in the chocolate chips and fold into the batter until evenly distributed.
- Cover the cookie dough with plastic wrap and place in the fridge for 30 minutes to chill.
- Once the brownies are done baking, let them cool completely.
- When you're ready to bake the cookies, preheat the oven to 350 degrees.
- Remove the brownies from the pan and cut into small ½ inch by ½ inch squares, creating about 25 from the square brownie sheet.
- Remove the chilled cookie dough from the refrigerator. Scoop a large ball out and flatten in your hand. Press a small square piece of the brownies into the center of the chocolate chip cookie dough.
- Fold the edges of the cookie dough up around the brownie piece. Then finish the top with a smaller piece of cookie dough to cover and seal the rest of the brownie inside the dough ball.
- Repeat with the rest of the dough and place each finished dough ball on a baking sheet lined with parchment paper.
- Place them at least 2 inches apart from each other, only fitting 8 cookies on a pan at a time.
- Bake in the oven for 12-15 minutes or until the edges of the cookies are golden brown and the center is slightly undercooked.
- Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes. Serve warm, or transfer to a wire rack to cool completely before storing in an airtight container.
