Rinse the berries in water and dry the strawberries on a towel. Chill the berries for an hour in the refrigerator. Melted chocolate adheres well to cold fruit.
Remove the green leaves and stem of the strawberries. Use a small paring knife, or strawberry huller, to cut off the greens while maintaining the rounded shape of the strawberries.
Add the dark chocolate to a microwave-safe bowl and melt the chocolate in the microwave. Heat for 30 seconds, stir and then heat for another 15-30 seconds if needed. Do not overheat the chocolate. You can add one teaspoon of coconut oil if you want a glossy sheen.
Dip the wide end of the strawberry into the melted chocolate and then immediately into the dark chocolate sprinkles. Place on a plate covered with plastic wrap. Repeat the process for the remaining strawberries.
Refrigerate the chocolate coated strawberries for one hour.
Now finish decorating the hedgehogs. Create whiskers by placing two pieces of light-colored sprinkles into each side of the narrow part of the strawberries.
If the melted dark chocolate has hardened, re-heat it in the microwave for 15 seconds.
Use a dab of melted chocolate to glue the candy eyes and chocolate chip nose onto each strawberry. Chill the hedgehogs in the refrigerator for 15 minutes.
Notes
Make sure the strawberries are dry, otherwise the chocolate won't stick to them.
For a pretty presentation, place the strawberry hedgehogs on a plate with mint leaves and sugar flowers.
