DIY Chocolate Covered Hedgehog Strawberries: Cute Gift Idea

You may be used to seeing hedgehogs in your garden, but now you can add them to your dessert table. Make these no-bake chocolate covered hedgehog strawberries for your next summer gathering. Cute little critters that people will enjoy as a refreshing treat on a hot, summer day.

No-Bake Chocolate Covered Hedgehog Strawberries

Summer can be a tough time when it comes to desserts. I know that when it’s really hot and humid in my area, the last thing I want to do is turn on my oven. I also crave lighter, more refreshing treats in the summer. That’s why I love these no-bake strawberry hedgehogs.

Making chocolate covered hedgehog strawberries is super easy. It’s essentially a two-ingredient dish, with a few items needed for the decorations. I like to use dark chocolate for this recipe. However, you can use whatever chocolate you prefer. You could even use white chocolate if you don’t care about them looking like hedgehogs, and you just want cute strawberry critters.

Tips for Success

There are just a couple of tips that I have for this easy summer dessert. First, make sure that the strawberries are dry before you start dipping them in chocolate. This way the chocolate will stick to the strawberries. Make sure that you don’t wash the strawberries too far in advance. Strawberries are delicate so you want to wash and dry them right before using. Then chill them for a bit so that they are cold for dipping.

You can use a paring knife to remove the stems on the strawberries, but using a strawberry huller really makes the process quick and easy. And it’s a safe tool for kids to use, so you can get the whole family involved making these cute strawberry hedgehogs for your next cookout. If you want to get some prep work done in advance, it’s OK to remove the stems and then place the strawberries in the refrigerator until you’re ready to wash and decorate.

Step by Step With Photos

Start by removing the stems on the strawberries. Then gently rinse the strawberries with cold water. I like to place the strawberries on a plate, or baking sheet, lined with a paper towel to soak up the excess water. Place the strawberries in the refrigerator for about an hour so that they are nice and cold.

Place the melting chocolate, or chocolate chips in a microwave-safe bowl and microwave for 30 seconds. Stir the chocolate and continue microwaving in 15-second intervals until the chocolate is smooth.

Dip the wide part of each strawberry into the melted chocolate. You can then dip the melted chocolate into the dark chocolate sprinkles. Or, pour the sprinkles onto the strawberries. Place the chocolate covered strawberries onto a plate, or board, lined with plastic wrap. Refrigerate the strawberries for about an hour.

Remove the chocolate covered hedgehog strawberries from the refrigerator and continue decorating. Add light colored sprinkles to make the whiskers, candy eyes for the eyes, and a chocolate chip nose. Use a little bit of the melted chocolate as the glue for attaching the nose and eyes. If the chocolate hardened up, simply reheat in the microwave for a few seconds. And if you don’t have candy eyes on hand, you can use melted white chocolate instead.

Hedgehog Strawberries

Cute and easy chocolate dipped strawberries decorated to look like hedgehogs. A fun dessert for a party, or edible gift.

Equipment

  • Plastic wrap
  • Plate or Baking Sheet
  • Microwave safe bowl

Ingredients
  

  • 3 ounces dark chocolate
  • 8 strawberries
  • 16 sugar eyes
  • 1/4 cup chocolate sprinkles
  • 1/2 tsp. light colored sprinkles
  • 8 chocolate chips

Instructions
 

  • Rinse the berries in water and dry the strawberries on a towel. Chill the berries for an hour in the refrigerator. Melted chocolate adheres well to cold fruit.
  • Remove the green leaves and stem of the strawberries. Use a small paring knife, or strawberry huller, to cut off the greens while maintaining the rounded shape of the strawberries.
  • Add the dark chocolate to a microwave-safe bowl and melt the chocolate in the microwave. Heat for 30 seconds, stir and then heat for another 15-30 seconds if needed. Do not overheat the chocolate. You can add one teaspoon of coconut oil if you want a glossy sheen.
  • Dip the wide end of the strawberry into the melted chocolate and then immediately into the dark chocolate sprinkles. Place on a plate covered with plastic wrap. Repeat the process for the remaining strawberries.
  • Refrigerate the chocolate coated strawberries for one hour.
  • Now finish decorating the hedgehogs. Create whiskers by placing two pieces of light-colored sprinkles into each side of the narrow part of the strawberries.
  • If the melted dark chocolate has hardened, re-heat it in the microwave for 15 seconds.
  • Use a dab of melted chocolate to glue the candy eyes and chocolate chip nose onto each strawberry. Chill the hedgehogs in the refrigerator for 15 minutes.

Notes

  • Make sure the strawberries are dry, otherwise the chocolate won’t stick to them.
  • For a pretty presentation, place the strawberry hedgehogs on a plate with mint leaves and sugar flowers.
