Pour the coconut flakes into a Ziploc bag, or bowl, and add several drops of orange food coloring. Mix the coconut and dye together to create orange colored coconut. Pour the coconut onto a parchment lined baking sheet and spread it out into a thin layer so that it can dry.
Place four cookies on a plate, or board.
Place the white chocolate, or candy melts, in a microwave-safe bowl. Microwave in 30-second intervals until the chocolate is smooth. Separate the melted chocolate into 3 small bowls.
Use food coloring to dye one bowl orange, one bowl green, and leave the 3rd bowl of chocolate white.
Transfer some of the orange colored chocolate into a piping bag and snip a small hole at the tip.
Draw a circle in the center of the cookie. Then draw a beard underneath the circle and fill it in with the orange chocolate.
While the chocolate is still wet, sprinkle the orange coconut flakes onto the beards to create the hair. Place the cookies in the refrigerator for 15 minutes. Brush off any excess coconut.
Add some white chocolate to the remaining orange chocolate to create peach colored chocolate. Spread the chocolate inside the orange circle to create the face. Place candy eyes and a nose on the leprechaun face.
Place the green melted chocolate in a piping bag and draw the brim of the hat and the outline of the top hat. Fill in the outlines with chocolate.
Decorate the hats with chewy black candy, sprinkles, and stars. Refrigerate treats completely until chocolate has set.
Notes
Once the chocolate has set, the leprechaun cookies are ready to serve. Or, package up to give as St. Patrick's Day gifts.
The cookies can be stored in an airtight container and will last for weeks.
