Separate a little over 2 1/2 ounces of buttercream into 3 small bowls.
Put 2-3 drops of orange food color in one of the bowls and mix until all the buttercream is orange. Repeat this step to with the yellow food gel color in the next bowl and the red food gel color for last bowl.
Place the each of the colored buttercream kfrotings in its own piping bags and tie the ends.
Cut a small hole at the tip of the piping bag with the red buttercream. About an inch from the top of the cupcake pipe a straight line across it. Then pipe several bumps across the top of the cupcake that resemble a cloud. Make sure the lines connect.
Using the same red buttercream fill in the top portion of the cupcake. Use a clean butter knife or spatula to smooth out the buttercream.
Pipe three bumps with orange buttercream slightly on top of the bottom portion of the red buttercream following the same piping and filling steps as above. Then repeat the same steps again with the yellow buttercream.
Now get the chocolate sandwich cookies and scrape the cream off the inside of each cookie.
Use the red buttercream to pipe 2 dots on the cookies where you want the eyes to be. Place one candy eye on each dot.
Use the yellow buttercream to pipe a triangle beak below the eyes. Then using the red buttercream, pipe the turkeys snood around the yellow beak.
Pipe some of the yellow buttercream on the back of the cookies and attach it to the yellow portion of the cupcakes.
Notes
The cupcakes can be stored in an airtight container in the fridge for 4 days, although the texture of the cookies may change so it's better to add them after the cupcakes are brought to room temperature.
Use any flavor of cupcakes you'd like.
Any leftover buttercream can be stored in a freezer bag or an airtight container in the refrigerator for 10 days.
