Prep your work surface with a sheet of parchment paper.
Using a serrated knife, cut off the corners on one end of each vanilla wafer cookie to create the pointed tip of the pencil.
Melt the pink candy melts and dip the square end of each vanilla wafer into it. Allow the chocolate to set up and harden.
Melt the white chocolate and dip the pointed tip of the pencil into it. Immediately place a mini chocolate chip right at the tip to create the lead tip of the pencil. Place on the parchment and allow to set until hardened.

Storage: Pencils can be stored in an airtight container for up to 1 week.
