Cute Pencil Wafer Cookies to Make for Back to School Treat
These pencil wafer cookies are a fun treat to pack in a lunch box as a back to school snack. They are also perfect to make for a school bake sale. A quick and easy decorated no-bake dessert that is fun to make with the kids. Here is a look at how to make these sugar wafer pencil cookies.
What You Need for Pencil Wafer Cookies
The beauty of this dessert is that it uses store bought sugar wafer cookies as the base. All you need are some chocolate candy melts, white chocolate, and chocolate chips for decorating the wafers.
Ingredients:
- 1 package vanilla sugar wafer cookies
- ยผ cup pink candy melts
- ยผ cup white chocolate chips or white candy melts
- 1 Tablespoon mini chocolate chips
Steps by Step Instructions
Start by lining a baking sheet, or work surface, with parchment paper. Using a serrated knife, cut-off the corners on end of the wafer to make the point of the pencil.
Place 1/2 cup pink candy melts in a bowl and microwave for 30 seconds. Stir the chocolate and reheat in 10-15 second intervals until the chocolate is smooth. Dip the flat end of the wafer into the melted chocolate to make the eraser for the pencil. Place the decorated pencil wafers on the parchment paper to let the chocolate set.
Melt 1/4 cup white chocolate, or white candy melts. Use the same process as you did with the pink candy melts by heating in short intervals until the chocolate is smooth.
Dip the pointy end of the pencil into the white chocolate and place it back on the parchment paper. Immediately place a mini chocolate chip on the end to make the sharpened tip for these pencil wafer cookies.
Once the chocolate has set, store the pencil wafer cookies in an airtight container. They will last for about one week.

Instructions
- Prep your work surface with a sheet of parchment paper.
- Using a serrated knife, cut off the corners on one end of each vanilla wafer cookie to create the pointed tip of the pencil.
- Melt the pink candy melts and dip the square end of each vanilla wafer into it. Allow the chocolate to set up and harden.
- Melt the white chocolate and dip the pointed tip of the pencil into it. Immediately place a mini chocolate chip right at the tip to create the lead tip of the pencil. Place on the parchment and allow to set until hardened.
