A Look at the Ingredients & Substitutions
Ingredients needed for this butterscotch Rice Krispies recipe:
- 11 ounces butterscotch morsels
- 6 cups rice cereal
- 1 teaspoon vanilla extract
- 10 ounces mini marshmallows
- ยฝ cup white chocolate or melts
- ยผ teaspoon salt
- 4 Tablespoons unsalted butter
Vanilla extract โ A splash of vanilla ties the flavors together and enhances the butterscotch notes. Pure vanilla is best, but imitation will do in a pinch.
Rice Krispies cereal โ The base of this recipe. Any puffed rice cereal will work, but the classic brand has the best texture.
Butterscotch chips โ The star ingredient. If you canโt find them, caramel chips or even white chocolate chips are decent swaps, though the flavor will be lighter.
Marshmallows โ Mini marshmallows melt quickly, but regular ones work just fine. Theyโre what make the bars soft and chewy.
Unsalted butter โ Creates a smooth, rich base for melting everything together. Salted butter works tooโjust don’t add any extra salt.
Step by Step With Photos
I like to start by prepping things so that I can move quickly once the butter and butterscotch chips are melted. Line a 9″x13″ baking pan with aluminum foil and spray with non-stick cooking spray. Measure 6 cups of rice crispy cereal into a bowl and set aside.
Melt 4 Tablespoons butter in a large saucepan over medium-low heat.
Add 11 ounces butterscotch chips.
Stir the butterscotch chips until smooth.
Add a 10-ounce bag of mini marshmallows.
Stir the marshmallows until smooth, then add 1 teaspoon vanilla extract and 1/4 teaspoon salt.
Remove the pan from the heat and add 6 cups rice crispy cereal.
Quickly stir the mixture until the rice cereal is evenly distributed.
Transfer the Rice Krispie mixture to the prepared baking pan. Gently press down to form an even layer.
Let the treats cool for 45 minutes at room temperature and then remove them from the pan. Melt 1/2 cup white chocolate until smooth.
Drizzle the melted white chocolate over the Rice Krispie treats.
Let the chocolate harden and then cut the Rice Krispie treats into bars.
Freezing and Storing
Store the Rice Krispie bars in an airtight container at room temperature for up to 3 days to keep that crispy-chewy texture. They will last longer than that, but I think after 3 days they tend to dry out a bit. Avoid the fridge unless your kitchen is super warm. The cold temp can make them tough.
You can also freeze the bars. Wrap individual bars in plastic wrap and place them in an airtight container or freezer-safe bag for up to 2 months. When you want to enjoy, thaw them at room temperature for about 30 minutes before eating.
These butterscotch Rice Krispies treats are proof that even the simplest desserts can feel a little extra special. Theyโre sticky, chewy, and perfectly sweet with that irresistible butterscotch flavor woven through every bite. Whether youโre making a batch to share, wrapping some up as a gift, or keeping them all to yourself (no judgment), they bring a cozy, comforting vibe thatโs hard to resist. One taste, and youโll see why this recipe has a way of becoming a family favorite.
One of my favorite rice cereal treats is Scotcheroos. Peanut butter Rice Krispies topped with chocolate. This is a family favorite! A couple more no bake treats to make are these Rice Krispies with Sprinkles and Rice Krispie Caramel Squares.
