Easy Marshmallow Frosting Recipe for Yummy Smore Cupcakes

This marshmallow frosting recipe is super easy to make, and it’s loaded with so much flavor. It’s like whipped marshmallow fluff on top of whatever chocolate dessert you’d like. I keep it simple and just go with a boxed cake mix. It let’s me whip-up these S’More cupcakes in no time. You can even make the cupcakes ahead of time, and then top with the marshmallow frosting right before serving if you want.

The key to this marshmallow frosting is the marshmallow fluff. That gooey, sweet marshmallow creme that’s not just for making peanut butter and fluff sandwiches. It gives this frosting the perfect marshmallow flavor and texture.
An electric mixer is ideal for making this marshmallow frosting. A hand mixer is OK, but I really recommend using a stand mixer. Because the marshmallow is a thicker ingredient, it’s better to use the paddle attachment instead of the whisk when mixing the ingredients.
Cream the room temperature butter on medium speed until light and creamy. Softened, room temperature butter is key to making this process easier. Scrape down the sides of the bowl and then turn the mixer on low. Gradually add the powdered sugar to the butter and continue mixing until thoroughly combined.
Add 1 teaspoon vanilla extract and 1/8 teaspoon salt and mix until combined. Then add 7 ounces marshmallow fluff and mix on medium speed until creamy.
With the mixer on low, slowly add 1/3 cup heavy cream. Once combined, increase the speed to medium-high and whip until the marshmallow frosting is light and fluffy.
Now you’re ready to use the frosting to top your favorite dessert. To make S’Mores cupcakes, transfer the frosting to a piping bag and then pipe swirls of frosting on top of chocolate cupcakes. Top with a piece of graham cracker and a section of a Hershey’s chocolate bar to give these cupcakes the authentic S’More flavors.

- 3.5 cups powdered sugar spooned and leveled
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/3 cup heavy cream
- 7 ounces marshmallow fluff
Instructions
- In a stand mixer fitted with a paddle attachment, beat the softened butter on medium speed. With the mixer on low, slowly add the powdered sugar 1 cup at a time. Mix until fully incorporated.
- Add the vanilla extract and salt and mix on medium speed until blended.
- Add the marshmallow fluff and mix on medium speed until combined.
- With the mixer running on slow speed, slowly add the heavy whipping cream. Increase to medium-high speed and mix until light and fluffy.
