Easy Rice Krispie Smore Treats: No-Bake Summer Dessert

These Rice Krispie smore treats are a fun twist on two classic desserts. When you have a craving for S’Mores and rice cereal treats, this recipe lets you create a mashup. A marshmallow cereal treat that’s filled with graham crackers and chocolate to give you the crunch and flavor you’d expect from S’Mores.
It’s a quick and easy recipe that’s fun to make year-round, but it’s especially great during the summer. As a no-bake treat, you don’t have to worry about turning on your oven and heating up your home. So, on a hot summer night, you can serve up these S’More Rice Krispie treats for your family to enjoy.

One of the great things about these rice krispie Smore treats is that they don’t require a lot of ingredients. It also doesn’t take a lot of equipment, which makes them the perfect treat to make anytime, anywhere. For college students with limited kitchen space, when traveling in an RV, or whenever if you find yourself with limited resources. You could make these rice cereal treats using a hot plate, or even a microwave if you’re in a pinch.
To make these S’Mores rice krispie treats, start by lining a 9″x11″ baking pan with aluminum foil. Then lightly spray the foil with a non-stick cooking spray. Because you need to move quickly when combining the ingredients, I recommend measuring the ingredients ahead of time to have them ready to add when needed.
Melt 1/2 cup of butter in a large saucepan over medium heat. Add 1 teaspoon vanilla extract and 1/4 teaspoon salt and stir to combine. Add 10 ounces of mini marshmallows to the melted butter and continue heating until the marshmallows have melted.
Remove the saucepan from the heat and immediately add 6 cups rice crispy cereal, 1 cup crushed graham crackers, and the remaining 5 ounces of marshmallows. Stir until combined and then add 2/3 cup chopped chocolate, or chocolate chips. When the chocolate is mixed-in it makes a pretty swirl as it gently melts into the rice cereal mixture.
Transfer the Smore cereal mixture to the prepared baking pan and gently press the mixture into the pan. You can use a spatula, or place a piece of parchment paper over the mixture and press down with your hands. Don’t press down too hard as this will make the treats too compact and they’ll lose their chewiness.
Let the Rice Krispie treats set for 15 minutes. Use the aluminum foil to help remove the treats from the pan. Place the remaining 1/3 cup chocolate in a microwave-safe bowl and heat in 15-second intervals until smooth. Drizzle the chocolate on top of the Rice Krispie Smore treats and immediately top with more mini marshmallows and crushed graham crackers. Let the treats rest while the chocolate hardens.
At this point the S’Mores rice krispie treats are done, but there’s one more step you can do if you want to give them more of a campfire effect. Use a kitchen torch to toast the marshmallows on top. Then you’re ready to cut them up and enjoy!

Ingredients
- ½ cup unsalted butter
- 15 ounces mini marshmallows – divided reserve a handful for garnish
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 6 cups crispy rice cereal
- 1 cup crushed graham crackers plus extra for topping
- 1 cup chopped semi-sweet chocolate or chocolate chips – divided
Instructions
- Line a 9×13-inch baking dish with aluminum foil and lightly coat with nonstick spray.
- Melt the butter in a large saucepan over medium heat. Stir in the vanilla extract and salt.
- Add 10 oz of the mini marshmallows to the pot and stir continuously until completely melted and smooth. Remove from heat.
- Quickly stir in the rice cereal, crushed graham crackers, and the remaining 5 oz of mini marshmallows. Gently fold in about ⅔ cup of the chopped chocolate or chocolate chips.
- Transfer the mixture to the prepared baking pan. Gently press it down into an even layer. Let sit for at least 15 minutes to cool and set.
- Remove the treats from the pan and set on a cutting board or clean surface.
- In a microwave-safe bowl, melt the remaining chocolate in 15 to 20 second intervals, stirring until smooth.
- Drizzle the melted chocolate over the top and sprinkle with extra marshmallows and crushed graham crackers. Let the chocolate harden.
- Optional: Toast the marshmallows on top using a kitchen torch for that classic s’mores flavor.
Notes
- Store in an airtight container at room temperature for up to 3 days.
