Step by Step With Photos

I like to start by prepping things so that I can move quickly once the butter and marshmallows are melted. Line a 9″x13″ baking pan with aluminum foil and spray with non-stick cooking spray. Measure 6 cups of rice crispy cereal into a bowl and set aside.

Melt 1/4 cup butter in a large saucepan over medium-low heat, and then add 1 teaspoon vanilla extract and 1/4 teaspoon salt.

Stir the marshmallows for about 5-7 minutes, until melted and smooth.

Gently press the cereal mixture into an even layer. Don’t press too hard and compact the cereal. Let the treats sit for 30 minutes, until firm.

Melt 1/2 cup white chocolate in the microwave in 30-second intervals until smooth.

Let the chocolate harden and then cut the Rice Krispie holiday treats into bars.

Freezing and Storing

Store the Rice Krispie bars in an airtight container at room temperature for up to 3 days to keep that crispy-chewy texture. They will last longer than that, but I think after 3 days they tend to dry out a bit. Avoid the fridge unless your kitchen is super warm. The cold temperature can make them tough.

You can also freeze the bars. Wrap individual bars in plastic wrap and place them in an airtight container or freezer-safe bag for up to 2 months. When you want to enjoy, thaw them at room temperature for about 30 minutes before eating.
