Yellow and red cake decorating icing is used to create the mustard and ketchup for the hamburgers. If you don’t want to use frosting, you could use candy melts or melted white chocolate that you mix with food coloring.

The vanilla wafer hamburger cookies are topped with a light coating of honey that’s used as the glue to hold the sesame seeds on top. You can substitute either of these ingredients if you want. Sprinkles could be used instead of sesame seeds, and an egg wash could be used instead of honey.

As I mentioned above, you can use chocolate ganache or Nutella instead of using the Keebler chocolate mint cookie. And if you don’t like coconut, how about going with green sprinkles, or maybe some pistachios for the lettuce layer? You could also paint wafer paper green and cut it up into little pieces to look like lettuce. Or, pipe some green frosting using a grass piping tip.

These are mini hamburger cookies because they are small, but you can make them extra small by using mini Nilla Wafers if you’d like.

To make these imposter cookies, start by making the “lettuce”. Place the shredded coconut in a glass bowl. Add some green food coloring and use a fork to mix the coconut until the green is evenly distributed.

Now you’re ready to start the assembly process for the vanilla wafer hamburger cookies. Take one Nilla vanilla wafer and place it upside down so that the flat side is facing up. This will be the bottom bun for the hamburger.

Place a small dot of icing in the center of the cookie. This will act as the glue as you place the Keebler mint cookie on top of the vanilla wafer.

The hamburger now needs the toppings. Add a ring of yellow icing for the mustard, and top that with a ring of red icing for the ketchup. You want the colors to be visible so place the colors on top of each other.

Use a teaspoon to scoop out 1/2 teaspoon green coconut. Place the coconut on top of the yellow and red icing.

Use a pastry brush to brush a very thin layer of honey on top of the vanilla wafer. Immediately sprinkle the sesame seeds on top of the honey and then place the vanilla wafer on top of the hamburger. Your imposter hamburger cookie is now complete, and ready to be shared as a fun treat at your next summer gathering.

Ingredients
  

  • 20 Nilla Wafers
  • 10 Keebler Fudge Mint Delights
  • 1/2 cup shredded coconut
  • Green food coloring
  • 2 ounces yellow decorating icing
  • 2 ounces red decorating icing
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon honey

Instructions
 

  • Place the shredded coconut in a small bowl. Add a few drops of green food coloring and mix with a fork until the coconut is evenly tinted to look like lettuce.
  • Start with one Nilla Wafer, flat side up. This will be the bottom bun for the hamburger.
  • Add a small dab of yellow or red icing to the center of the wafer to help hold the Fudge Mint Delight in place.
  • Press one Keebler Fudge Mint Delight on top of the icing.
  • Pipe small circles of red and yellow decorating icing on top of the fudge cookie to resemble ketchup and mustard.
  • Sprinkle about ยฝ teaspoon of the green coconut on top of the icing.
  • Place another Nilla Wafer on top, flat side down, to form the top bun.
  • Brush a light layer of honey on top of the cookie and sprinkle with sesame seeds.
  • Repeat the process to make the remaining burgers.
