What if you could make a crispy cereal treat that’s loaded with extra crunch and cookie flavor? That’s exactly what you get with these cookie monster Rice Krispie treats. A gooey marshmallow cereal treat inspired by cookie monster.

Like all Rice Krispie treats, these cookie monster Rice Krispie treats are easy to make. Some of the differences with this recipe include the use of browned butter to add extra flavor.

In addition to the classic mixture of melted butter and marshmallows, this recipe also includes sweetened condensed milk. Make sure you use condensed and not evaporated milk. You want the added sweetness and thicker consistency that comes from the condensed milk.

And now let’s talk about what makes these cookie monster Rice Krispie treats. Blue food coloring gives the cookies the classic cookie monster coloring. And since he loves cookies, these rice cereal treats are loaded with extra cookies.

Step by Step Process

I used crushed Chip Ahoys and Oreos, but you can mix-in your favorite cookies. And while you could opt for homemade cookies, I recommend sticking with the store bought versions. You need the crunch and texture that the store bought cookies offer.

To make these cookie monster Rice Krispie treats, start by putting 6 cups rice crispy cereal in a large bowl and set it aside. Spray a 9″x11″ pan with cooking spray, or coat it with butter. Set the pan aside.

Now it’s time to brown the butter. Add 2 sticks of butter to a large saucepan and heat over medium heat until the butter turns brown, and gives off a nutty aroma.

Add the bag of marshmallows to the melted butter. Continue heating the mixture, stirring occasionally. It takes a little while for the marshmallows to melt and to mix together with the butter. Just be patient as it does come together into a creamy, and smooth mixture. After the marshmallows have melted, add 1/2 cup sweetened condensed milk to the mixture.

Remove the mixture from the heat and add 1/2 teaspoon vanilla extract. Then add the blue food coloring. Add as many drops as it takes to achieve the color you’d like. I found that mine turned out a little more green once I added the cereal, so I recommend to err on the side of making the mixture extra blue.

Once the mixture is blended, pour it into the bowl with the Rice Krispie mix. Quickly stir the mixture together.

Add 1/2 cup white chocolate chips, 3/4 cup crushed Chip Ahoy cookies, and 3/4 of crushed Oreos. Mix to combine it all together.

Place the rice crispy mixture into the pan and press it down so that it’s even. Then top the cookie monster Rice Krispie treats with the remaining cookie crumbs, and white chocolate. Press down slightly so that the toppings adhere to the treats.

Cookie Monster Rice Crispy Treats

Ingredients
  

  • 2 sticks unsalted butter browned
  • 10 ounce bag of large marshmallows
  • ½ cup sweetened condensed milk
  • ½ teaspoon vanilla
  • Blue dye
  • 6 cups rice crispy cereal
  • ¾ cup white chocolate chips
  • 10 Chips Ahoy chocolate chip cookies crumbled
  • 10 Oreos crumbled

Instructions
 

  • Place the cereal in a large bowl and set aside.
  • In a medium saucepan, melt two sticks of butter. Continue stirring the butter over medium heat until it starts to brown and smells nutty.
  • Add the marshmallows to the pan and melt them down while stirring together. In the beginning the marshmallows will look like they aren’t mixing together with the butter, but after about 5 minutes they will.
  • Add the sweetened condensed milk to the melted marshmallow mixture and stir together.
  • Remove from the heat and add the vanilla and blue food dye. Add as many drops as it takes to get your desired shade of blue.
  • Pour the mixture on top of the rice crispy cereal and mix together until all of them are completely coated.
  • Add ½ cup of the white chocolate chips, ¾ cup of the crumbled chocolate chip cookies and ¾ cup of the crumbled Oreos to the Rice Krispie mixture and stir together.
  • Coat a 9×11 inch pan with butter or cooking spray to prevent the Rice Krispie treats from sticking.
  • Pour the mixture into the pan and spread evenly. Sprinkle the remaining chocolate chips cookies, Oreos, and white chocolate chips on top of the pan and gently press into the Rice Krispies.
  • Cover the pan and let the treats rest for at least 20 minutes, then cut and enjoy.

Notes

● Store in an airtight container in the refrigerator, or take each Rice Krispie treat square and wrap individually in plastic wrap.
