Easy Easter Window Cookies: Colorful No Bake Sweet Treats
Classic Easter window cookies have a stained glass appearance reminiscent of a church window. These no bake Easter cookies give you that look, but in an easy dessert that you can pull together in minutes. The perfect treat to make for the holiday, or anytime you need something pretty and sweet to serve to your guests.

These no bake Easter window cookies have only 4 ingredients. And no fancy equipment is needed either, just a bowl and some parchment paper. That makes them the perfect treat to whip together when you need a pretty dessert for a spring gathering.
Steps for Easter Window Cookies
You wouldn’t think that a 4-ingredient dessert would have much flavor, but it does! That’s kind of the secret when you make something with only a few ingredients. Each ingredient has to deliver when it comes to flavor. And that certainly is the case with these Easter window cookies. You just need chocolate, butter, marshmallows, and coconut. Each ingredient helps add to the soft texture and sweet flavor. Plus lots of extra flavor from the coconut.
Place the white chocolate chips, and butter, in a microwave-safe bowl. Heat in 30-second intervals, stirring between intervals. Continue heating until the chocolate mixture is smooth. Let it cool for a few minutes.
You want the chocolate to remain soft and easy to mix, but you don’t want it so hot that it will melt the marshmallows when they are added. After the melted chocolate mixture has cooled a bit, add the pastel mini marshmallows. Stir to combine.
Line two baking sheets with parchment paper. Place a layer of shredded coconut on each baking sheet. Divide the marshmallow and chocolate mixture in half and place one half on each baking sheet. Shape each mixture into a log, and use the parchment paper to help roll the log in the coconut.
After the logs are covered in coconut, wrap them in parchment paper. Then place the logs in the refrigerator for at least 2 hours. That makes these Easter window cookies a great make-ahead treat. Perfect for the holiday when you want an after dinner sweet that is a breeze to make. Just slice and serve when you’re ready. I like to cut the cookies into 1/2 inch slices, but you can make them a little thicker if you prefer.

Easter Church Window Cookies
Ingredients
- 2 cups white chocolate chips
- 1/2 cup butter sliced
- 1 10 ounce bag pastel mini marshmallows
- 2 cups sweetened shredded coconut
Instructions
- In a large microwave-safe bowl melt the chocolate chips and butter in 30 second increments until just melted and smooth.
- Set aside to cool slightly. You want it the mixture to still be melted but not hot enough to melt the marshmallows.
- Add the marshmallows to the cooled chocolate mixture and stir to combine.
- Sprinkle the coconut evenly on 2 pieces of parchment paper.
- Separate the mixture evenly between the 2 pieces of parchment paper.
- Using the parchment paper shape the chocolate mixture into an 8-10 inch log.
- Wrap the parchment paper around the logs and place in the refrigerator to chill for at least 2 hours, but may be chilled overnight.
- When ready to serve remove from the refrigerator and slice into ½-1 inch slices.
